Order it your way is the whole idea at this Salisbury craft barbecue spot. Built on central Texas recipes and techniques, the kitchen serves everything market style, so you can go a la carte or by the platter and customize your plate.
The brisket gets top billing here, cooked with a light dry-rub crust and a texture that lives up to the low-and-slow reputation. Lean cuts, homemade sauces, and beautifully wood-smoked meats keep the counter line moving.

4. Wicked n’ Wood BBQ & Wood Grill, East Falmouth, MA

Cape Cod finally got the barbecue trailer it was missing, and this East Falmouth spot right on Route 28 delivers. It is a wood-grill and smoke operation dishing out ribs, pulled pork, and burnt ends from a compact setup.
The ribs are the reason to stop, meaty and moist with enough smoke that they do not even need sauce. Pulled pork and burnt ends are close behind, and the mac and cheese has plenty of fans of its own.

The trailer runs Wednesday through Sunday with early-evening closing times, so this is more of a lunch-and-dinner daytime stop. Curbside pickup, takeout, and outdoor seating make it easy to grab and go while exploring Falmouth.
5. B.T.’s Smokehouse, Sturbridge, MA

Plenty of road-trippers passing through Sturbridge pull off specifically for this rustic counter-serve smokehouse, and the heaping portions explain why. Southern-style smoked meats come with all the fixings and no pretension.

The ribs get the loudest praise, meaty and smoky with a clean pull off the bone. Brisket comes with a nice bark and a visible smoke ring, and even the point cuts stay juicy and flavorful.
Pulled pork is a reliable pick, and the mac and cheese pairs so well that some regulars mix the two together on the same fork. Homemade sides and smoked catfish round out the offering.
