A smash burger looks simple, but getting those thin patties crispy at the edges and juicy in the middle takes real skill. Missouri has plenty of grills doing it right, from busy city taverns to a small-town drive-in along a state highway.
This list covers nine spots across the state, including St. Louis, Kansas City, Columbia, Springfield, Jefferson City, and Cape Girardeau. Some are worth a quick lunch stop, and a few are worth planning a whole road trip around, so save this one before your next burger craving hits.
1. Mac’s Local Eats, St. Louis, MO

Dry-aged beef in a smash burger is not something you find on every corner, and that is the calling card here. Mac’s Local Eats works out of Bluewood Brewing Company on Oakland Avenue, near Forest Park, and builds its burgers around locally raised meat.
The Louie and the Split Open and Melt are two of the most ordered burgers. Plant-based eaters are covered too, with a veggie smash patty and a full vegan menu, so a mixed group can order without trouble.
Do not skip the sides. Chili cheese fries, rip fries, and regular fries with bacon onion dip all earn their spot on the tray.
It is counter service, with outdoor seating, a kids’ menu, and free parking nearby. Plan around the schedule, since the kitchen is closed Monday and Tuesday and opens at 11 AM the rest of the week.
Saturday afternoons get busy, so a weekday lunch is the easier play.
2. Jack Nolen’s, St. Louis, MO

Look up when you walk in. The tin ceiling sets the tone at Jack Nolen’s, an informal neighborhood tavern on South 9th Street with a patio out back.
The smash burgers come off the grill with beef that is slightly crispy, not burnt, which is exactly the line a good smash patty should walk. Loaded fries make a natural partner.
The rest of the menu goes further than you might expect for a small tavern. Pot stickers, deviled eggs, a Buffalo fried chicken sandwich, and a pesto grilled cheese all show up.
The space is on the smaller side, which gives it a friendly, everybody-fits-together energy. Reservations are not accepted, and Friday nights fill up fast, so a Tuesday evening is your best shot at an easy seat.
Note the short Sunday hours, 11 AM to 5 PM, and that it is closed Mondays.
3. Cosmo Burger XR, Kansas City, MO

Bob Ross on one TV and Pokemon on another. Cosmo Burger XR on Locust Street leans hard into retro fun, and the food backs it up.
The burgers are the star, with juicy smash patties, crispy edges, cheese, grilled onions, and a signature burger sauce. Tots are the side to grab.
Save room for a shake. These are old-school diner shakes, and you get the metal mixing cup with the extra on the side, which basically means a shake and a half.
Late hours make it handy after a show downtown, with doors open until 11 PM most nights and midnight on Fridays and Saturdays. Street parking can be tricky, so give yourself a few extra minutes.
A kids’ menu makes it an easy family pick too.
4. Tay’s Burger Shack, North Kansas City, MO

Open 24 hours, every day of the week. That alone puts Tay’s Burger Shack on Armour Road in a league of its own for late-night burger runs.
The patties are smashed thin and grilled crispy, and they often spread a little wider than the bun. The beef is all-natural and grass-fed, and the toppings list is long.
Go big here. Bacon, sauteed onions, mushrooms, jalapenos, and Sriracha mayo or Sriracha ketchup turn a basic cheeseburger into a project worth tackling.
Hand-cut fries come with the meal, and the menu also includes Nathan’s Famous hot dogs, chili cheese fries, and fresh squeezed orange juice. The setup is busy and no-frills, with counter ordering and patio seating.
Dogs are even welcome inside, which is rare for a burger joint.
5. 44 Canteen, Columbia, MO

Burgers and tacos sharing top billing might sound like a split personality. At 44 Canteen in downtown Columbia, it simply works.
The Canteen Cheeseburger stacks two smash patties with a secret mayo-based sauce, served with house-made fries. It is the order for anyone who came specifically for the beef.
Friends who want something else have options. The Walking Steak Taco, Son of Juice roasted pork tacos, Sloppy Disco Fries, and a Nashville hot chicken sandwich round out a creative menu.
The dining room is polished but relaxed, a short walk from the University of Missouri campus. Parking is paid street parking and can take some patience.
It is closed Sundays, and Friday evenings are the busiest stretch.
6. Lindberg’s Tavern, Springfield, MO

Duck fat. That is the secret behind the smash patties at Lindberg’s Tavern, and it gives the burgers a rich, crisp sear that sets them apart from anything else on this list.
The tavern sits in a historic building on Commercial Street in Springfield’s old-town district. There is a stage for live bands, and the room has that dark, classic bar look.
Dip your fries in the house-made ketchup. Poutine is another specialty, including a cashew chicken version that nods to a famous Springfield dish.
The Cuban sandwich, Queen City Dip, fried green tomatoes, and bread pudding are also on the menu, plus veggie burgers. Hours run late, until 1 AM Tuesday through Saturday.
Free parking is usually easy to find.
7. B’s & G’s Dairy Crest, Marionville, MO

Road trippers on US-60 between Springfield and Monett, take note. B’s and G’s Dairy Crest in Marionville is a classic drive-in with an old-town burger stand feel.
The double smash burger with onion rings is the move. Fresh ingredients and crispy patty edges come standard.
Fry fans get choices, with both crinkle fries and waffle fries. Coneys are on the menu too, and strawberry and chocolate shakes handle dessert.
The place stresses hometown hospitality, and it pairs that old-school charm with modern conveniences like card payments and a rewards program for regulars. Hours are limited, Tuesday through Saturday only, so check the day before you make the drive.
8. Izzy’s, Jefferson City, MO

Size matters at Izzy’s. The smash burgers here are known for being some of the biggest classic smash patties around, and they still keep that thin, crisp style.
You will find Izzy’s on East High Street in downtown Jefferson City, just a few blocks from the Missouri State Capitol. That makes it a handy lunch stop if you are touring the capital.
Burgers come with hot fries, and the menu also covers milkshakes and ice cream. It is a simple lineup that stays focused on doing a few things well.
Ordering is at the counter, with indoor and outdoor seating plus high chairs for little ones. Izzy’s is open Monday through Saturday, 11 AM to 8 PM, and closed Sundays.
9. Good Things Kitchen, Cape Girardeau, MO

Two chefs and a local brewery teamed up to create Good Things Kitchen, and that small-business collaboration is the whole story behind this Water Street spot near the Mississippi River.
Elevated bar bites are the focus. Double smash burgers lead the menu, and onion rings are the side to pair with them.
Jumbo wings, foot-long hot dogs, and beer mac and cheese fill out the lineup. It is comfort food with a little extra polish.
Timing takes some planning. Weekday service runs 5 to 10 PM Tuesday through Friday, with lunch hours added on Saturday and Sunday.
It is closed Mondays, and free parking is available nearby.
Wherever you live in Missouri, at least one of these grills is closer than you think. Pick a route, grab a friend, and go find your favorite smash patty.
