Carrot Cake Cookie Base
- 1 cup butter (softened)
- 1 cup brown sugar (packed)
- 3 tablesppons heavy cream (room temperature)
- 1 cup granulated sugar
- 1 cup carrots (shredded)
- 1 tablespoon vanilla extract
- 2 egg yolks
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon all spice (optional)
- 1 teaspoon salt
- 1 pinch cloves
- 1/4 teaspoon ginger
Cream Cheese Frosting & Topping
- 1 oz cream cheese
- 6 tablespoons butter
- 2 cups powdered sugar
- 1 teaspoon vanilla
- 1 cup walnuts (chopped for topping)
Preparation
Start by creaming the butter with both brown and granulated sugar until the mixture is smooth.
Mix in the egg yolk, heavy cream, and vanilla extract until well combined and smooth.
Separately, combine flour, baking powder, baking soda, cinnamon, allspice, ginger, cloves, and salt in a mixing bowl.
Cooking / Creating
Gradually add the dry ingredients to the wet mixture and mix until the flour is fully incorporated and a dough forms.
Gently fold in freshly shredded carrots into the dough.
Using a scoop, form the dough into individual cookie portions and place them on a lined baking sheet.
Flatten the dough balls slightly and bake them in the preheated oven at 350°F for about 12 minutes.
Serving / Presentation
Let the cookies cool for approximately 20 minutes on the baking sheet before moving them to a wire rack to finish cooling.
Prepare the cream cheese frosting by creaming together the butter, full-fat cream cheese, vanilla extract, and powdered sugar until creamy.
