FOR THE ONIONS:

  • 1 tbsp. butter
  • 1 large onion (thinly sliced)
  • Kosher salt

FOR THE SAUCE:

  • 2 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 tablespoon sweet pickle relish
  • 1/2 tsp. white vinegar
  • 1 pinch sugar
  • sea salt to taste

FOR THE BURGERS:

  • 1 lb. ground beef (80/20 blend)
  • Kosher salt
  • Freshly ground black pepper
  • 6 slices American cheese
  • 4 tbsp. yellow mustard
  • 3 potato buns (toasted)
  • Iceberg lettuce
  • 1 tomato (sliced)
  • 4 pickles
  1. Prepare the Special Sauce

  2. In a small bowl, mix together mayonnaise, ketchup, sweet pickle relish, white vinegar, sugar, and a pinch of salt. Adjust the seasoning to taste. Set aside.

  3. Shape the Patties

  4. Divide the ground beef into 8 equal portions and form them into thin patties slightly larger than the buns. Season both sides with salt and pepper.

  5. Cook the Patties

  1. Preheat the Skillet: Heat a skillet or frying pan over medium heat. Add butter or oil to coat the bottom of the skillet.

  2. Add Onions: Once the butter has melted or the oil is hot, add the thinly sliced onions to the skillet. Spread them out evenly across the surface.

  3. Season: Sprinkle a pinch of salt over the onions. This will help draw out moisture and caramelize the onions.

  4. Cook Slowly: Reduce the heat to low. Let the onions cook slowly, stirring occasionally. The key to perfect grilled onions is patience; they should soften and become golden brown without burning. This process can take about 15-20 minutes depending on your stove and skillet.
