Chicken Breading:

- ½ cup corn starch
- ½ cup mayo
- 1 teaspoon hot sauce
- 1 teaspoon paprika (or cajun or taco seasoning)

- 1 teaspoon onion powder
- 1 teaspoon cayenne pepper (for the spicy version)
- 1 teaspoon salt
- 1 teaspoon pepper
- 3-4 cups canola oil (for frying)
Final Serving:
- 4 count medium-sized brioche buns
- 3 count sliced pickles
- 1 tablesppon unsalted butter (melted)
Special Mayo Sauce
- 3/4 cup mayonnaise
- 8 cloves black garlic puree
- 1 tablespoon Franks Hot Sauce
- 1 pinch Kosher salt
- 1 teaspoon smoked paprika
- 1 squeeze lemon juice
To Marinate Chicken
Flatten chicken breasts to an even thickness using a mallet or rolling pin, sandwiched between parchment paper or plastic wrap. Then, slice each breast in half horizontally to create two smaller pieces slightly larger than your buns.
Mix buttermilk, paprika, hot sauce, garlic powder, salt, and black pepper in a large bowl. Submerge the chicken in this marinade and refrigerate. For optimal flavor, marinate up to 24 hours, though immediate use is also fine.
To Fry Chicken
Warm oil in a deep skillet or pot over medium heat, aiming for 350°F, or set up your electric fryer accordingly.
Combine flour, cornstarch, and additional spices in a separate shallow bowl. Enhance the flour mixture by blending in 2-3 tablespoons of the leftover buttermilk marinade, using a fork to stir.
