The Cajun Spirit
Razzoo’s Cajun Cafe has always brought the Cajun spirit with them since they opened their first store in 1991 in Dallas, Texas. It was a time when Louisiana-style cooking was lacking among other restaurants. The Cajun culture is what drove Razzoo’s to adopt bayou flavors in their food in true Cajun spirit.

But what exactly is the Cajun spirit? Well, to get to know Razzoo’s, it is important to understand their heritage involving the Cajun people. The name Cajun came from the Acadian or French people who first settled in Louisiana back in 1765. When the English took control of their place, the Acadians refused to pledge loyalty towards them, and they were soon kicked out.
Many Acadians chose to settle in Louisiana’s bayous, which was a low-lying area near a swamp. Acadians shared the area with other groups of Native Americans and immigrants, and they shared a culture that created the Cajun Country.
A lot of Cajuns are resourceful and adaptable, so they get to create something from the available resources that they have, including the bayous. They would go hunting, fishing, and harvesting for their food. With this, they created dishes involving seafood, bell peppers, and rice. That pretty much gives you an idea of the birth of Cajun-style food.
