The Croissant Wave Hitting Dallas

It was in the year 1980 when French man Patrick Esquerré felt the croissant wave hitting the city of Dallas in Texas. He explained the wave simply as a trend where people like good bread. He decided that the women of Dallas needed a place to buy good bread, so with the help of his good friend Stanley Marcus (yes, the executive of the luxury store Neiman Marcus), they scored a lease on Mockingbird Lane, which became the home of La Madeleine.

According to Esquerré, if a woman gets what she wants, she talks. This became one of his aims for building the La Madeleine brand—a bakery where women can buy good bread and croissants.

Esquerré chose to include dishes that appealed to American tastes. For instance, the Caesar Salad, which wasn’t originally French, was added. When Esquerré’s mother traveled from Europe to sample the offerings and help with recipes at his restaurant, she had never heard of Caesar Salad. Soon enough, it became one of La Madeleine’s popular dishes, with 25% of sales coming from different salads.

From The Club

I think of La Madeleine’s founder, Patrick Esquerré, as a man who was written by a woman. I love how he started his concept with the question of what women want, and I guess he achieved his aim! La Madeleine’s sounds like a place where women usually spend Sunday brunch with a good book. I’m intrigued with the Liberté Tart as a strawberry pastry kind of girl! I guess I deserve to treat myself to some fresh strawberries kind of treat and cookies at La Madeleine this weekend.
