Good ribs take time, and the best pitmasters in Arizona know there are no shortcuts. From a busy Phoenix counter to a hillside patio in an old mining town, the state has some serious smokehouses worth planning a road trip around.
This list covers seven spots where the meat is smoked in-house, the ribs hold their own next to the brisket, and the sides get real attention too. Some are city favorites with lines out the door, while others sit in small towns where lunch can easily turn into a full afternoon outing.
A few open only certain days, so timing matters. Grab a stack of napkins, check the hours, and figure out which one gets the first visit.
1. Little Miss BBQ-University, Phoenix, AZ

Central Texas barbecue has a home base in Phoenix, and it sits on East University Drive. Little Miss BBQ keeps things simple with counter service, butcher-paper-style plates, and a menu built around smoked meat.
Pork ribs and beef ribs share the spotlight with the brisket here, and both carry a clean smoke ring and tender bite. The Pork Belly Burnt Ends Plate is another reason people plan their lunch around this stop.
Save room for the sides. Jalapeno Cheddar Grits are a standout, and the dessert case includes a Smoked Pecan Pie and Banana Pudding.
Expect a wait, since the place does not take reservations and stays busy, especially Tuesday, Wednesday, Thursday, and Saturday afternoons. Hours run 11 AM to 7 PM Monday through Saturday and 11 AM to 3 PM on Sunday.
Families will find high chairs and a kids’ menu, and dogs are welcome on the outdoor seating. Parking is usually easy, which helps when the line is long.
2. Kiss of Smoke BBQ, Tucson, AZ

Friday is rib day in this corner of Tucson, so plan accordingly. At Kiss of Smoke BBQ, the St Louis pork ribs show up as a Friday special, and they come out fall-off-the-bone tender with a sweet and smoky finish.
The family-run spot on South Plumer Avenue keeps a short schedule. It opens Wednesday through Saturday from 10 AM to 3 PM, which makes it a lunch mission rather than a dinner plan.
Those morning hours have a bonus. A brisket breakfast burrito sits on the menu, and the Mega Melt in Your Mouth Brisket handles the afternoon crowd.
Sides lean Southern, with fried okra, mac n’ cheese, and western beans. Porky’s Tacos and a Ribs and Brisket Combo Platter round things out for anyone who cannot pick just one meat.
Prices land around $10 to $20 per person, one of the friendlier tabs on this list. Free parking is usually easy to find.
3. Bobby D’s BBQ, Jerome, AZ

Few barbecue patios come with a view like this one. Bobby D’s sits on Jerome Avenue in the old mining town of Jerome, and its deck with picnic tables looks out over the Verde Valley.
The smoker does plenty of advertising on its own as visitors stroll the hillside streets. Inside, the menu covers chicken, brisket, pulled pork, and ribs that pull clean from the bone.
A full rack of ribs with onion rings makes a great shared order. The Rib Platter with Brisket and Cole Slaw and the Smokin Sliders are other solid picks.
Look for the house Bone Lickin’ Mustard next to the BBQ sauce. Live music shows up on the schedule too.
Parking in Jerome can be tricky, so give yourself extra time. Weekend afternoons are busiest, and hours stretch to 8 PM on Friday and Saturday.
4. Satchmo’s, Flagstaff, AZ

Smoke meets New Orleans on North Fourth Street. Satchmo’s pairs in-house smoked barbecue with Cajun favorites, which makes it a different kind of stop than the Texas-leaning spots on this list.
The pork ribs are tender with a deep smoke flavor and a light hint of heat that stays friendly. Brisket gets equal love, and the Brisket Sandwich Plate is an easy order.
Then there is the Cajun side of the menu. King’s Gumbo, an Andouille Sausage Po’Boy, Smo-Fried Catfish Bites, and a Blackened Fish Fillet all make it tough to stick with ribs alone.
Do not skip the Tater Tot Basket, which arrives with a well-loved seasoning. Satchmo’s is open daily from 11 AM to 8 PM, and parking is usually plentiful, a nice perk after a day exploring Flagstaff.
5. Rim Country BBQ and Wood-Fired Pizza, Payson, AZ

Can’t decide between barbecue and pizza? Payson solved that argument on West Main Street.
Rim Country BBQ and Wood-Fired Pizza smokes pork ribs, sliced or shredded brisket, pulled pork, turkey, and even salmon. The ribs come out tender and satisfying, and the BBQ Sampler Plate is the easy way to try several meats at once.
Meanwhile, the wood-fired oven turns out crispy pepperoni pizza for anyone in the group who wants a slice instead. Brisket Burnt Ends, Garlic Cheese Curds, and Bread Pudding are also on the menu.
A fireplace adds charm on cooler mountain days, and live music appears too. Unlike several spots here, Rim Country accepts reservations.
It is open daily from 11 AM to 8 PM, with Saturday the busiest stretch. Plates mostly run $10 to $20 per person.
6. Doc’s BBQ & Whiskey Prescott, Prescott, AZ

Downtown Prescott already draws weekend crowds, and Doc’s gives them a smoky place to land. The restaurant sits on South Montezuma Street with an outdoor patio that keeps things lively.
Ribs here carry a strong smoke flavor and finger-licking finish, while the brisket stays very tender. The Barbecue Meat Platter with Coleslaw covers both nicely.
Burnt Ends get their own spotlight, including a Burnt End Burger. BBQ Nachos, Texas Toast, and a Smoked Turkey Club add variety.
Hours run later than most places on this list, until 10 PM on Friday and Saturday. Sunday opens early at 8 AM.
Dogs are welcome inside and out, which is rare. Free parking and curbside pickup make a quick stop simple.
7. Silver King Smokehouse & Saloon, Superior, AZ

Superior is a small historic mining town east of Phoenix, and its Main Street smokehouse is a great reason to pull off the highway. Silver King Smokehouse brings brisket and ribs straight out of the smokehouse.
Ribs are dry rub style, well seasoned and nearly falling apart. Sauce is optional here, since the rub does the heavy lifting.
The brisket stays juicy, and the pulled pork sandwiches have a strong following. Smoked turkey, Loaded Fries with Brisket, and a Wedge Salad with Brisket are also on the menu.
A full vegetarian menu means mixed groups are covered. The patio welcomes dogs.
Plan carefully, because Silver King is open only Friday and Saturday from 11 AM to 9 PM and Sunday from 11 AM to 6 PM. Reservations are accepted, and street parking is usually easy.
Seven stops, seven styles, and plenty of ribs worth a tank of gas. Pick a direction, check the hours, and start smoking through the list.
