Washington takes its coffee seriously, and the best cups often come from roasters far beyond the big-name chains. Small shops from Bellingham to Walla Walla are roasting their own beans, mixing their own syrups, and pulling shots worth planning a morning around.
This list covers eight roasters across the state, each with its own reason to earn a spot. Save it for your next road trip, or send it to the friend who always judges the latte art.
1. Roast House Coffee, Spokane, WA

Free samples are a big part of the experience at this Spokane roaster. Roast House focuses on sustainable, organic beans, and its small tasting area lets you try a roast before buying a bag.
The staff know their coffee well and are happy to help you choose from a wide selection of unique beans. That makes it a smart stop for anyone who brews at home and wants something more interesting than the grocery aisle offers.
The shop sits at 423 E Cleveland Ave, and free lot and street parking make it an easy visit. Hours run Monday through Friday from 7 AM to 4 PM and Saturday from 10 AM to 2 PM, with Sundays closed.
Saturdays get the most traffic, so a weekday morning is a calmer time to taste. Grab some merch on the way out, like the shirts that remind you to stay caffeinated.
2. Camber Coffee, Bellingham, WA

Brunch and serious coffee share the spotlight in downtown Bellingham. Camber roasts its beans in house and pairs them with a real food menu served with table service, which is rare in the specialty coffee world.
Menu standouts include the Lox Tartine, Avocado Tartine, a vegetarian breakfast sandwich, and a gluten-free, dairy-free Lemon Olive Oil Cake. On the drink side, look for pour overs, the Cream Latte, a Green Matcha Latte, and a Cherry Cola Cold Brew that is just as fun as it sounds.
The space is big and open with lots of seating, free Wi-Fi, high chairs, and outdoor tables where dogs are welcome. It stays calm enough for studying or laptop work.
You will find it at 221 W Holly St, open daily from 8 AM to 2 PM. Parking downtown can be tricky, so plan a few extra minutes.
3. Olympia Coffee Roasting, Olympia, WA

Early risers in the state capital have it good. Olympia Coffee Roasting opens at 6:30 AM on weekdays and stays open until 6 PM, which is later than most shops on this list.
This specialty roaster has built a strong reputation across the coffee industry. The cafe at 600 4th Ave E serves artisanal espresso drinks and nitro cold brew, along with drip coffee, iced coffee, a vanilla latte, and a seasonal-style Ginger Spice Latte.
Pastries and croissants round out the counter, and the latte art tends to arrive as a neat little heart. Seating, Wi-Fi, and a quiet, relaxed setting make it a good place to settle in.
Weekends open at 7 AM. Saturday and Sunday mornings bring the biggest crowds, while weekday afternoons are much easier.
4. Bluebeard Coffee Roasters, Tacoma, WA

A restored building on Tacoma’s 6th Avenue gives Bluebeard plenty of character before you even order. Natural light fills the space, and the beans are roasted right on site.
The house roasts lean smooth and nutty, and the espresso bar is known for consistent cortados and careful latte art. Curious drinkers should look for the pistola, a coffee drink with a chile kick.
Mochas, lattes, and croissants keep things classic, and prices stay friendly at about $1 to $10 per person. Strong Wi-Fi makes it a popular laptop spot.
Bluebeard is open every day from 7 AM to 5 PM at 2201 6th Ave. Street parking fills up, so a weekday morning visit is the low-stress move.
5. Relevant Coffee, Vancouver, WA

Plenty of outlets might be the most underrated feature of any coffee shop, and Relevant Coffee has them. This independent roaster on Main Street pairs that practical touch with a stylish, comfortable room.
Bean quality is the main draw, and the coffee here is known as some of the most consistent in Vancouver. The menu covers cortados, nitro cold brew, mocha lattes, chai lattes, and hot tea.
Seasonal specials keep regulars coming back, and vegan treats make the pastry case friendly for more diets. Outdoor seating offers good people-watching, and dogs can join you outside.
Find it at 1703 Main St, open daily from 7 AM to 5 PM. A good selection of bagged beans makes it easy to take the experience home.
6. Aventura Coffee, Yakima, WA

Homemade syrups set Aventura apart in downtown Yakima. Every syrup and flavor is made in house, and the beans are roasted by the shop too, so each drink is handcrafted from start to finish.
That approach shows up in seasonal beverages that change through the year, along with well-made lattes and cappuccinos. For a valley better known for its farms and orchards, a consistently good local roaster is a welcome addition.
The shop also serves breakfast, brunch, and lunch options, including vegan and vegetarian choices. Free Wi-Fi and a quiet setting suit anyone getting work done.
Aventura sits at 118 S 1st St with free parking nearby. Hours are 7 AM to 4 PM on weekdays and 8 AM to 4 PM on weekends.
7. Livit Coffee Co., Walla Walla, WA

Not many coffee shops come with a pool table. Livit Coffee Co. in Walla Walla offers the occasional game alongside coffee and smoothies, which gives it a laid-back personality.
The coffee is hand roasted by the shop, and beans are ground on site for freshness. Try the cortado or the maple latte, then pair it with the avocado toast that keeps showing up on tables.
Tons of roasts are available to buy and take home, and you can grab a trucker hat while you are at it. Delivery is also an option here.
Livit is at 1509 E Isaacs Ave with free lot and street parking. It opens at 7 AM on weekdays and 8 AM on Saturdays, closes at 5 PM, and stays closed Sundays.
8. Mela Coffee Roasting Co., Wenatchee, WA

Road trippers heading over the Cascades will want this downtown Wenatchee stop on their map. Mela Coffee Roasting Co. roasts its own coffee and serves it in a relaxed space with brick walls.
Along with house-roasted coffee, the shop offers cafe fare and baked goods, so breakfast is covered too. It opens at 6 AM on weekdays, which is handy for an early start.
Saturday hours run 7 AM to 5 PM, and Sunday runs 8 AM to 4 PM. There is a free on-site lot at 17 N Wenatchee Ave, a nice perk downtown.
If one stop on this list closes out a statewide coffee tour, this East Wenatchee neighbor of the Columbia River is a fine finish line.
