Great barbecue takes patience, and the best pitmasters in Wisconsin know it starts long before the doors open. All across the state, smokehouses fire up their pits early so the brisket, ribs, and pulled pork have hours to turn tender and smoky.

From a gas-station counter in East Troy to a lakeside spot in Door County, these eight places take smoked meat seriously. Here are the ones worth planning a meal around.

Meat cooked over a wood-burning pit is the whole point at this compact Madison joint on Packers Avenue. The chopped brisket sandwich gets plenty of attention, and for good reason.

The menu leans classic, with a half slab of BBQ ribs, that famous chopped brisket, and sides that hold their own. The creamy mac and cheese and baked beans with a bit of kick round out a plate nicely.

If you want to take some flavor home, they sell jars of their gourmet BBQ sauce and Flavor Magic seasoning. The spot has picked up plenty of local awards over the years.

Expect a hole-in-the-wall setting that keeps the focus on the food. It is open Wednesday through Sunday, closed Mondays and Tuesdays, and doesn’t take reservations.

Hours run daily, with later closing on Fridays and Saturdays. Street parking in the Third Ward can be a challenge, so give yourself a few extra minutes to find a space before you sit down.

Yes, it really is inside a gas station, and yes, some of the best barbecue in southeast Wisconsin comes out of it. LD’s uses oak smoke to turn out dinners, sandwiches, and sides from a counter along Main Street in East Troy.

The lineup covers a lot of ground: fall-off-the-bone ribs, tender brisket, hot sausage, juicy chicken, and even a smoked meatloaf that shows up on Wednesdays. The thick, cheesy mac and cheese and banana pudding are worth saving room for.

Prices stay friendly here, landing in the ten to twenty dollar range per person, which makes it an easy repeat stop. There’s no table service, so you order at the counter and grab a seat.

It’s open Wednesday through Sunday, and there’s usually a wait when the crowd builds on Saturday afternoons. Parking is plentiful, and the small-village square nearby makes it a solid road-trip detour.

Brisket, lean pulled pork, smoked turkey, and ribs come with about a dozen sauces made fresh, so you can mix and match to taste. The BBQ cheese curds and Carolina fries are proof this is Wisconsin barbecue through and through.

A fireplace and live music give the place a cozy, laid-back feel, and dogs are welcome. Prices stay in the ten to twenty dollar range, which is easy on a vacation budget.

Hours are a little compact: closed Monday and Tuesday, evenings only Wednesday and Thursday, and midday through evening Friday, Saturday, and Sunday. It’s a counter-serve setup, so plan to order up front.

Texas-style barbecue in the middle of rural Oconto County? That’s the pitch at Primal Eats, a smokehouse in Gillett with a picnic-table patio and a fire pit built for lingering.

The Three Meat Platter is the move, letting you try brisket, pulled pork, and sausage all at once, with smoked chicken also in the mix. Candied pork belly, brisket mac and cheese, cornbread, and cherry cobbler give the menu real range, and there’s even a Meat Lovers pizza and a fried perch platter.

Primal Eats is open Wednesday through Saturday, 11 AM to 8 PM, and closed the rest of the week. It’s counter service with plenty of parking, so come hungry and settle in for a while.

Peters’ Boyz is open Wednesday through Saturday and closed Sunday through Tuesday. It’s dine-in or takeout only, prices stay budget-friendly, and there’s usually plenty of parking.
