The shelves lean wild. Sausage and jerky come in beef and pork, plus venison and wild boar, and the selection includes some unusual varieties you will not spot at a chain grocery store.

Processing is not limited to deer, either. The shop handles larger jobs like half a beef, and the drop-off process is known for being simple and fairly priced.

Hours run Monday through Friday from 8 a.m. to 6 p.m. and Saturday from 9 a.m. to 5 p.m. It is closed Sunday.

I would aim for a Saturday morning or a weekday evening, when things tend to be quieter. Curbside pickup and delivery are also options if you just want the jerky without the stop.

Boerne’s Main Street is built for wandering, and Klein Smokehaus gives you a solid reason to stop. It is a butcher shop and casual counter-service eatery under one roof.

The on-site barbecue side serves brisket, ribs, turkey, and chicken. The brisket hoagie and pork belly burnt ends are two standouts, and meals typically run $10 to $20 per person.

It is a relaxed, kid-friendly place with free parking in a lot and on the street. No reservations are needed.

Plan around the schedule, though. Klein is open Tuesday through Friday from 10 a.m. to 5:30 p.m. and Saturday from 10 a.m. to 3 p.m., closed Sunday and Monday.

Travelers heading west out of San Antonio on US-90 have been pulling into Dziuk’s for dried sausage for years. The shop sits at 608 US-90 in Castroville, the small Alsatian town in Medina County.

Hours are long. It opens at 7 a.m.

Monday through Saturday and 10 a.m. on Sunday, closing at 7 p.m. every day.

Weekends bring the crowds, especially Saturday and Sunday afternoons. A weekday morning is the smoothest time to shop.

Pastries and a ribeye share the spotlight with the smoked selections. It is easy to leave with more than you planned.

Prasek’s opens at 7 a.m. most days and 8 a.m. Sunday, staying open into the evening.

Friday and Sunday afternoons are busiest.
