Buffalo sauce is usually a hit or miss for me in terms of taste. I think the only time I’ve ever liked the taste of buffalo sauce on chicken is when a friend made it for a potluck. Personally, I think it’s a difficult flavor to nail because it has to be a perfect balance of heat, tang, savory and sweet tastes. I don’t like it when it’s too spicy that it undermines all of the other flavors that can make buffalo sauce a great condiment. If I want something that’s pure heat, I’d just go with Sriracha, if you know what I mean.
