Some pizza shows up pale, floppy, and forgettable. The pies on this list come out of wood-fired ovens with dark blistered spots on the edge and a chew you can actually feel.
From Pensacola to Miami Beach, these seven Florida spots still bake pizza the old way, with real fire and dough made with care, so save this one for your next pizza night or road trip.
1. Sogna Napoli Trattoria & Pizzeria, Tampa, FL

Tampa has plenty of pizza on Dale Mabry Highway, but only a few places put a real wood fire at the center of the kitchen. Sogna Napoli is one of them, a trattoria at 12913 N Dale Mabry Hwy that pairs wood-fired Neapolitan pizza with homemade pasta.
The crust is thin in the middle, with chewy edges and toasted bubbles around the rim from the oven. The char is the point here, and it balances a bright sauce and savory cheese.
Purists should try the Marinara Pizza, which skips the cheese and lets the crust and sauce carry the whole pie. Save room for the homemade tiramisu or a cannoli.
Reservations are accepted and recommended for dinner, and Saturday evenings and Sunday afternoons fill up fast. Parking is free and usually easy, and there is outdoor seating if you want to eat outside.
2. Il Pizzaiolo – Neapolitan Pizzeria Miami Beach, Miami Beach, FL

Late-night pizza in South Beach usually means a quick greasy slice. Il Pizzaiolo, at 1403 Washington Ave, offers a better option, staying open until 11:45 PM most nights and past midnight on Fridays and Saturdays.
The pies are baked in a wood-fired oven in the Neapolitan style. That means a light, airy middle, crispy and chewy edges, and plenty of charred spots around the rim.
The Pizza Carbonara is one of the more unusual picks on the menu. If you are sharing, the calamari and shrimp or a caprese salad makes a good start.
Families will find a kids’ menu, and dogs are welcome inside and out. Street parking is paid, so plan on walking a bit after your meal.
3. PIABELLA ARTISAN WOOD-FIRED PIZZA, West Miami, FL

Dessert pizza is not usually a sign of a serious pizza place, but Piabella pulls it off. The Nutella Pizza shares a menu with carefully made savory pies at this cozy spot at 6001 SW 8th St.
The kitchen pays close attention to the basics: the dough, the sauce, the cheese, and the wood oven. The result is a crust that is crisp outside, chewy inside, and lightly charred.
The Burrata and Prosciutto Pizza is the headliner, and the same pairing comes as a calzone for anyone who wants it folded. Pepperoni and Cotto pies cover the classics.
Hours run late on Fridays and Saturdays, until 12:45 AM. Free parking and a family-friendly setup make this an easy weeknight pick, too.
4. Pizza Bruno, Orlando, FL

Plan on a wait. Pizza Bruno on Curry Ford Road usually has one, especially on Friday and Saturday evenings, and the crust explains why.
The menu divides its wood-fired pies into red and white styles, baked Neapolitan-style. Expect a soft crust with charred leopard spots, a bit of smoky crispness, and a solid chew.
The NYC Pepperoni and NYC Margherita are the familiar choices. The kale salad is popular too, and the Nutella Cannoli is a good way to finish.
Vegan diners have a full menu to choose from, including a cauliflower dish. Dinner starts at 5 PM on weekdays, and lunch is served on weekends.
5. Pie95 Pizza, Jacksonville, FL

Pizza with a fair price tag is harder to find these days. Pie95 keeps most meals between 10 and 20 dollars a person at its King Street spot in Jacksonville’s Riverside area.
The dough is handmade and baked in a wood-fired oven, so the crust comes out rustic and crisp outside with a soft, chewy center. The char is consistent from one pie to the next.
Names like the Carnivore and the Herbivore make choosing easy, and the Bianca covers anyone who skips red sauce. The curry lemon wings and meatballs are good reasons to order more than pizza.
It is open Tuesday through Saturday evenings only, with no reservations. Arrive early, and know that dogs are welcome.
6. LUCKY DOUGH PIZZA, Pensacola, FL

Sourdough is the twist at Lucky Dough, an outdoor pizza spot at 104 Gregory Square in Pensacola. The dough is naturally fermented and then baked in wood-fired ovens in the Neapolitan style.
That slow fermentation helps produce a crust that is light, airy, and well charred, with just enough chew. It also feels lighter to eat than a heavier pie.
For something to start with, try the house-marinated Calabrian chile olives. Vegan and vegetarian diners have full menus here.
Since it is mostly an outdoor setup, check the forecast before you go. Hours are Tuesday through Saturday, 4 to 9 PM, and reservations are accepted.
7. Humble Wood Fire Pizzeria, Gainesville, FL

Wood-fired pizza for breakfast is a real option in Gainesville. Humble Wood Fire opens at 9 AM most days and serves brunch, espresso drinks like cafe con leche, and house-made desserts alongside its pies.
The pizzeria sits in a historic building at 619 S Main St. Everything is made from scratch with organic and locally sourced ingredients.
The crust is thin, light, and chewy, with blackened spots on the bottom. Toppings run long, with vegan, vegetarian, and gluten-free choices.
Try the arancini or a Tuscan kale salad, then finish with an Earl Grey sugar cookie. It does not take reservations, and on Tuesdays it opens at 4 PM.
