Six California Mom-And-Pop Burger Joints Where The Patties Are Still Cooked On A Flat-Top

Some of the best burgers in California do not come from big chains or fancy dining rooms. They come from small counters where a hot flat-top griddle does most of the work and the menu fits on one board.

The six spots on this list range from a decades-old stand in the San Fernando Valley to a late-night slice shop in San Diego and a smash burger favorite in Oakland. Each one keeps things simple, and each one gives you a real reason to make the trip.

1. Bill’s Burgers, Sherman Oaks, CA

Few griddles in Los Angeles have as much history baked into them as the one at this tiny Sherman Oaks stand. The flat-top has been in service for more than 50 years, and its seasoned surface gives every patty a deep, caramelized crust.

Bill Elwell has run the stand for decades, and he is often called one of the oldest burger cooks in the country. The setup is pure old-school: a small counter-serve window, outdoor bar counters, and no decorations trying to impress anyone.

The double cheeseburger is the order to know. For a twist, there is also a double burger topped with a slice of pastrami instead of bacon, plus butterflied grilled hot dogs and pastrami sandwiches.

Plan ahead, because hours are short. The stand opens Tuesday through Friday from 8:30 AM to 4 PM and closes on weekends and Mondays.

One tip I would pass along: eat it right there at the counter. These burgers are juicy enough that a long drive home in a bag does them no favors.

2. The Friendly, San Diego, CA

Pizza and burgers under one roof might sound like a menu having an identity crisis. At The Friendly in North Park, it simply works.

The burger here even wears its cooking method in its name. The Dirty Flat Top Burger and Dirty Flat Top Cheeseburger are thin smash-style patties that look simple on the tray but carry plenty of flavor.

Slices round out the menu, including pepperoni, spinach and ricotta, and several vegetarian options. Daily specials keep regulars guessing.

The space is casual and no-frills, with counter ordering, some outdoor seating, and a staff known for being easygoing and welcoming. Good music is part of the package.

Night owls get a break here. The kitchen stays open until 10 PM most nights and until midnight on Fridays and Saturdays, though street parking in the neighborhood can take some patience.

3. Pie ‘n Burger, Pasadena, CA

Since 1963, this Pasadena counter has been proving that a burger and a slice of pie belong on the same ticket. More than 60 years later, that formula has not changed much.

Grab a stool at the long lunch counter and watch the griddle work. The Cheeseburger Combo with Grilled Onions is a classic pick, and the house sauce gives the burgers their own personality.

Not into beef? Turkey and vegetarian burgers are on the menu too.

Then comes the second half of the name. Fruit pies like peach and rhubarb arrive with generous whipped cream, and pecan, apple, and chicken pot pie also have their fans.

Shakes and ice cream sodas fill in the rest of the nostalgia. The diner is open daily from 8 AM to 9 PM, has a kids’ menu and high chairs, and gets busiest on Saturdays, so a weekday lunch is a smart move.

4. Beep’s Burgers, San Francisco, CA

Need a burger at 1:30 in the morning in San Francisco? Beep’s on Ocean Avenue has been answering that question for generations.

The stand dates back to the mid-1960s, and its retro look and drive-up window still say so. Families in the neighborhood have been stopping by for decades.

Burgers come with toasted buns and toppings you can customize, and the beef is described as grass-fed and organic. The side menu goes deep, with curly fries, garlic fries, onion rings, and tater tots.

For something sweet and a little silly, the Twinkie Milkshake is a fun pick. Fried chicken sandwiches, a double fish sandwich, and a veggie burger are also available.

Hours run until 2 AM every night. There is outdoor seating and a parking lot, but no restroom, so plan accordingly.

5. BURGERS NEVER SAY DIE, Los Angeles, CA

Thin patties, crispy edges, and melty cheese are the whole mission at this Silver Lake counter. The name is bold, and the menu backs it up by staying tight and focused.

Smash burgers are the star. Patties are pressed hard on the hot surface so they pick up a charred, lacy crust, and the Three Stack is the move for bigger appetites.

Fries and soft serve finish the lineup. Seating is outdoors, which fits the low-key, grab-and-go vibe.

Expect a line, especially on Friday and Saturday evenings. Weekday afternoons tend to be calmer, and parking is usually easy to find.

I would save this one for a late craving. It stays open until 1 AM Thursday through Saturday, and it is a welcoming spot for groups and families alike.

6. Lovely’s, Oakland, CA

A drive-through in the middle of Oakland’s Uptown area is not something you see every day. Lovely’s leans into that old-school idea with a menu built around smash burgers.

The Drive Thru Burger is the signature, and hand cut fries, onion rings, and chili cheese fries make easy partners. Fried chicken and hot chicken sandwiches give non-burger fans plenty to choose from, and there is a full vegetarian menu as well.

Picnic tables and outdoor seating give the place a communal feel. It works for families too, with high chairs, and dogs are welcome inside and out.

Timing matters here. Lovely’s is closed Mondays, opens at 4 PM Tuesday through Saturday, and runs noon to 6 PM on Sundays, with evening waits common.

That small lineup of hours just means a burger here feels a little more earned.
